Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken thighs generously with salt and black pepper on both sides.
  2. In an ovenproof skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, place the chicken thighs skin-side down. Sear until golden brown, approximately 5–7 minutes.
  3. While the chicken sears, combine honey, lemon zest, lemon juice, butter, and black pepper in a small bowl and mix until smooth.
  4. Once the chicken skin is golden, carefully flip the thighs and pour the honey lemon mixture over the chicken.
  5. Transfer the skillet to the preheated oven and bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. For extra crispiness, broil the chicken for an additional 2–3 minutes.
  7. Remove from oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley and lemon slices.
