- 2 chicken breasts (boneless, skinless)
- 1/4 cup honey
- 1 lime (freshly squeezed)
- Salt and pepper to taste
- 1 avocado (sliced)
- Fresh cilantro (for garnish)
Instructions
- Preheat your grill or skillet over medium-high heat and pat the chicken dry.
- Mix the honey and lime juice in a small bowl until smooth.
- Season the chicken breasts with salt and pepper, then brush with the honey-lime mixture.
- Grill the chicken for about 6–7 minutes on each side or until cooked and golden.
- Allow the chicken to rest for 5 minutes, then slice thinly across the grain.
- Layer the cooked rice in a serving dish, followed by sliced avocado and the sliced chicken.
- Drizzle any remaining honey-lime sauce over the top.
- Garnish with fresh cilantro and serve immediately.
Notes
For a kid-friendly version, skip cilantro and serve avocado thinly sliced. Add jalapeño or hot sauce for adults.
