Classic Minestrone Soup with Ditali

Description

A hearty vegetable-packed minestrone soup featuring ditali pasta, perfect for a comforting meal.


Ingredients

  • 1 cup ditali pasta
  • 6 cups vegetable broth
  • 2 cups mixed vegetables (carrots, celery, zucchini), diced
  • 1 can (14 oz) canned tomatoes
  • 1 tsp dried basil
  • 1 tsp dried thyme

Instructions

  1. Boil water in a large pot with 1 tablespoon of salt for every 4 quarts of water.
  2. Add the ditali pasta and stir to prevent sticking.
  3. Cook for 8-10 minutes or until al dente.
  4. Drain the pasta but reserve 1 cup of pasta water for sauces.
  5. Toss the pasta with a little olive oil if not serving immediately.

Notes

For added flavor, sprinkle with Parmesan cheese before serving.
