A hearty vegetable-packed minestrone soup featuring ditali pasta, perfect for a comforting meal.
Ingredients

- 1 cup ditali pasta
- 6 cups vegetable broth
- 2 cups mixed vegetables (carrots, celery, zucchini), diced
- 1 can (14 oz) canned tomatoes
- 1 tsp dried basil
- 1 tsp dried thyme
Instructions
- Boil water in a large pot with 1 tablespoon of salt for every 4 quarts of water.
- Add the ditali pasta and stir to prevent sticking.
- Cook for 8-10 minutes or until al dente.
- Drain the pasta but reserve 1 cup of pasta water for sauces.
- Toss the pasta with a little olive oil if not serving immediately.
Notes
For added flavor, sprinkle with Parmesan cheese before serving.
