  • 1 cup strawberries, hulled and halved (reserve a few whole for garnish)
  • 2 cups chilled sparkling water or club soda
  • 1 cup chilled strawberry milk (store-bought or homemade)
  • 23 tbsp simple syrup or honey syrup (adjust to taste)
  • 1 tbsp freshly squeezed lime juice (about 1 lime)
  • Fresh mint sprigs, lightly bruised
  • Lemon or lime wheels, thinly sliced
  • Watermelon balls or strawberry slices for presentation
  • Crushed ice or a few large ice cubes

Instructions

  1. Prepare the fruit: Pulse the watermelon and halved strawberries in a blender until smooth. The mixture should be bright pink and fluid, not pulpy.
  2. Strain the purée through a fine mesh sieve into a pitcher to remove excess pulp for a silkier mouthfeel.
  3. Combine the strained juice with lime juice and simple syrup. Taste for balance — aim for a lively, slightly sweet-acid profile.
  4. Chill the strawberry milk thoroughly. If making at home, blend 3⁄4 cup strawberries with 1 cup cold milk and a teaspoon of sugar, then strain for a smooth result.
  5. Assemble gently: Fill chilled glasses with crushed ice or a large cube. Pour 3 parts watermelon mixture to 1 part strawberry milk into each glass.
  6. Add carbonation last: Top each glass with chilled sparkling water to taste.
  7. Garnish with mint sprigs, a lemon wheel, and a watermelon ball or strawberry slice. Serve immediately while the carbonation is lively.
