Description

Ingredients

  • 6 large Eggs
  • 1 1/2 cups Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 1/2 cups Cheddar cheese (shredded)
  • 1 cup Crackers (saltine or Ritz, crushed)
  • 2 tablespoons Butter (melted)
  • 1/2 cup Onion (chopped)
  • 1/2 cup Bell pepper (chopped)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. In a large mixing bowl, crack the 6 eggs and whisk in 1 1/2 cups of milk until smooth.
  4. Add salt, black pepper, and 1 1/2 cups shredded cheddar cheese; whisk to combine.
  5. Spread a layer of crushed crackers on the bottom of the baking dish.
  6. Layer chopped onions and bell peppers on top of the crackers.
  7. Pour the egg mixture over the layered ingredients, ensuring everything is evenly coated.
  8. Add another layer of crushed crackers and drizzle with melted butter.
  9. Bake for 35-40 minutes, or until a knife inserted comes out clean. Broil for 2-3 minutes for a crispy top if desired.
  10. Let the casserole rest for 5 minutes before serving.
