Ingredients

  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh orange juice (for glaze)
  • Slices of candied orange (optional, for garnish)
  • Slivered almonds, toasted (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
  3. In another bowl, whisk eggs and sugar until pale and frothy.
  4. Add melted butter, orange juice, and orange zest to the egg mixture; stir until combined.
  5. Gradually fold the dry ingredients into the wet mixture to form a smooth batter.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. For the glaze, whisk powdered sugar with orange juice until smooth.
  9. Allow the cake to cool for 10 minutes, then drizzle the glaze over the warm cake.
