Ingredients

- 1 large Eggplant (Baingan)
- 2 medium Tomatoes
- 1 large Onion
- 4–5 cloves Garlic
- 2 small Green Chilies
- 1 tbsp Mustard Oil (or Ghee)
- 1 tsp Cumin Seeds
- Fresh Coriander Leaves for garnish
Instructions
- Roast the eggplant over an open flame or in the oven until soft.
- Peel the skin and mash the eggplant in a bowl.
- In a pan, heat mustard oil and add cumin seeds.
- Add chopped onions and sauté until translucent.
- Add chopped tomatoes, green chilies, and minced garlic; cook until tomatoes are soft.
- Add the mashed eggplant and mix well.
- Cook for a few minutes, then garnish with fresh coriander leaves.
Notes
Serve with whole-grain roti or a salad for a complete meal.
