Description

A classic Indian dish made with roasted eggplant and flavorful spices, perfect for weight loss.


Ingredients

  • 1 large Eggplant (Baingan)
  • 2 medium Tomatoes
  • 1 large Onion
  • 45 cloves Garlic
  • 2 small Green Chilies
  • 1 tbsp Mustard Oil (or Ghee)
  • 1 tsp Cumin Seeds
  • Fresh Coriander Leaves for garnish

Instructions

  1. Roast the eggplant over an open flame or in the oven until soft.
  2. Peel the skin and mash the eggplant in a bowl.
  3. In a pan, heat mustard oil and add cumin seeds.
  4. Add chopped onions and sauté until translucent.
  5. Add chopped tomatoes, green chilies, and minced garlic; cook until tomatoes are soft.
  6. Add the mashed eggplant and mix well.
  7. Cook for a few minutes, then garnish with fresh coriander leaves.

Notes

Serve with whole-grain roti or a salad for a complete meal.
