Description

Ingredients

  • 1 pound ground chicken
  • 1 cup bread crumbs (preferably Italian-style)
  • 2 large eggs (lightly beaten, at room temperature)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 1/3 cup mozzarella cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the ground chicken, bread crumbs, eggs, Parmesan, basil, parsley, garlic, salt, and pepper.
  3. Transfer the mixture to a parchment-lined baking sheet and shape it into a rectangular loaf.
  4. In a small saucepan, warm the marinara sauce over low heat and add olive oil.
  5. Place the meatloaf in the preheated oven for 30 minutes, then pour the sauce over the top and return to the oven for an additional 15 minutes.
  6. In the final minutes, sprinkle the mozzarella on top and bake until melted and golden, approximately 5 minutes.
  7. Allow the meatloaf to rest for at least 10 minutes before slicing.

Notes

For added richness, consider blending ground chicken with turkey or pork. Experiment with different fresh herbs for diverse flavors.
