Description

A refined rendition of a classic comfort food, this Italian Chicken Meatloaf features tender chicken infused with herbs and a savory sauce, perfect for gatherings or family meals.


Ingredients

  • 1 lb ground chicken (lean and tender)
  • 1 cup fresh breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 1 garlic clove, minced
  • 1 large egg, lightly beaten
  • Salt and black pepper, to taste
  • 1 cup high-quality marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, beaten egg, salt, and pepper. Mix gently until just combined.
  3. Shape the mixture into a loaf and place it into the prepared baking dish.
  4. Spread the marinara sauce evenly over the meatloaf.
  5. Bake for 45 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Sprinkle mozzarella cheese over the top 5 minutes before removing from the oven.
  7. Garnish with fresh basil leaves before serving.

Notes

For an elegant presentation, slice the meatloaf and serve with additional marinara sauce and garnish. Can be stored in the refrigerator for up to three days or frozen for up to three months.
