Description

This Homemade Jam Donut Focaccia blends the airy crumb of focaccia with sweet pockets of caramelised jam, perfect for brunch or dessert.


Ingredients

Scale
  • 500 g (4 cups) strong bread flour
  • 325350 ml (1 1/3–1 1/2 cups) lukewarm water
  • 10 g (2 tsp) fine sea salt
  • 7 g (1 packet) instant yeast
  • 30 ml (2 tbsp) olive oil, plus extra for drizzling (room temperature)
  • 150200 g (3/4–1 cup) thick fruit jam (raspberry or apricot recommended)
  • 1 tbsp lemon juice (to brighten flavour)
  • 2 tbsp granulated sugar (for sprinkling before baking)
  • Icing sugar to finish (optional)

Instructions

  1. Mix the dry ingredients: whisk flour, salt, and yeast in a large bowl until evenly combined.
  2. Combine the water, olive oil, and jam in a separate bowl until smooth.
  3. Form the dough by pouring the liquid into the flour and mixing until no dry flour remains.
  4. Bulk ferment the dough in an oiled bowl covered with plastic wrap for 60–90 minutes.
  5. Stretch the dough gently in an oiled pan and let it rest covered for 30 minutes.
  6. Create dimples in the dough and add dollops of jam, then sprinkle with sugar.
  7. Bake in a preheated oven at 220°C (425°F) for 18–22 minutes until golden brown.
  8. Finish and cool: brush edges with oil and dust with icing sugar before serving.

Notes

For a refined brunch presentation, serve with crème fraîche or mascarpone and micro herbs.
