- 8 oz Cream Cheese (softened)
- 1 cup Almond Flour
- 1/4 cup Coconut Flour
- 1 cup Erythritol
- 1 large Egg
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 2 tsp Ground Cinnamon
- Additional Sweetener (optional, powdered erythritol)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the softened cream cheese and erythritol until smooth. Add the egg and vanilla extract. Mix until fully incorporated.
- In a separate bowl, whisk together the almond flour, coconut flour, baking powder, salt, and ground cinnamon.
- Gradually add the dry mixture to the wet ingredients. Stir well until a dough forms.
- On a parchment-lined baking sheet, spread the dough into a 1/4 inch thick rectangular shape. Cut into strips about 2-3 inches wide.
- Roll each strip carefully from one end to the other, placing them seam-side down on the baking sheet. Bake for 15-20 minutes or until golden brown and crispy.
- Allow to cool for a few minutes before serving warm, optionally dusting with powdered erythritol.
Notes
Serve with sugar-free whipped cream or keto-friendly coffee. Store leftovers in an airtight container in the refrigerator for 3-4 days.
