Ingredients

  • 2 pounds ground turkey (or ground beef or pork)
  • 1 egg
  • ¾ cup shredded mozzarella cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 cup low-carb tomato sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • ½ cup grated parmesan cheese
  • Fresh basil or parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, egg, ¾ cup mozzarella cheese, onion powder, garlic powder, Italian seasoning, and salt. Mix gently.
  3. Form 1.5-inch meatballs and place on a lined baking sheet.
  4. Bake the meatballs for about 25 minutes, until cooked through.
  5. Transfer meatballs to a casserole dish. Pour tomato sauce over meatballs and top with remaining mozzarella and parmesan cheeses.
  6. Bake uncovered for 15-20 minutes, until cheese is melted and bubbly. Broil for 2-3 minutes for a golden top.
  7. Allow to cool for 5 minutes, garnish with fresh herbs, and serve warm.

Notes

Avoid overmixing the meatball ingredients to keep them tender. You can also add diced vegetables into the meatball mix for added nutrition.
