Description

A bold, savory Korean-style pot roast that is slow-braised for tender, melt-in-your-mouth beef, complemented by a warm, comforting sauce.


Ingredients

  • 1 chuck roast (about 34 pounds), salted and peppered
  • 2 tablespoons gochujang (Korean chili paste)
  • 4 garlic cloves, minced
  • 1/4 cup soy sauce (low-sodium preferred)
  • 1 onion, sliced thin
  • 2 cups beef broth
  • 1 tablespoon granulated sugar
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped, for garnish

Instructions

  1. Prepare the roast: Pat the chuck roast dry with paper towels and season all over with salt and pepper.
  2. Heat the pot: In a large heavy pot or Dutch oven, warm 1 tablespoon sesame oil over medium heat until it shimmers.
  3. Sear the meat: Add the roast and brown each side for 3–4 minutes until a deep brown crust forms. Remove the roast and set aside.
  4. Sauté aromatics: In the same pot, add the sliced onion and minced garlic. Cook 2–3 minutes until the onion softens.
  5. Add the sauce: Stir in 2 tablespoons gochujang, 1/4 cup soy sauce, and 1 tablespoon sugar. Mix briefly.
  6. Add broth: Pour in 2 cups beef broth and scrape the bottom of the pot to lift any browned bits.
  7. Return the roast: Put the browned roast back into the pot, ensuring the liquid comes partway up the meat.
  8. Braise low and slow: Cover the pot and lower the heat. Let it simmer for 3–4 hours, checking after 2.5 hours for tenderness.
  9. Finish and rest: Remove the roast and let it rest for 10 minutes. Adjust the sauce if necessary by simmering uncovered.
  10. Shred and serve: Shred the roast with forks, pour the sauce over, and garnish with chopped green onions.

Notes

Use low-sodium soy sauce if preferred. The roast can be seared a day ahead and kept in the fridge for ease.
