A refined, floral twist on the classic iced coffee, this Lavender Honey Iced Latte combines bright, chilled coffee with lavender and honey for a layered drink that’s both modern and timeless.

- 1 cup (240 ml) strong cold-brew coffee or double-strength chilled espresso, cooled
- 1 cup (240 ml) milk of choice, cold
- 1/2 cup (120 g) honey, preferably mild, runny
- 1/2 cup (120 ml) water
- 1 tablespoon dried culinary lavender buds, lightly crushed
- 1 teaspoon fresh lemon juice (optional)
- Ice cubes
- Small sprig of fresh lavender or 1/4 teaspoon dried lavender for garnish
- Optional: cold foam or 1 tablespoon of vanilla-infused cream
Instructions
- Make the lavender-honey syrup: combine water, honey, and crushed lavender in a small saucepan. Warm gently over low heat until honey dissolves and steam rises.
- Remove from heat, cover, and steep for 15 minutes. Strain the syrup into a jar and stir in lemon juice if using.
- Cool completely in the fridge or quickly in an ice bath.
- Chill the coffee and milk: ensure both are cold. Fill a tall glass two-thirds with ice.
- Build the latte: pour the cold coffee over the ice, add lavender-honey syrup, then top with milk.
- Stir to integrate, taste for sweetness, and adjust with more syrup if desired. Garnish with lavender.
Notes
Best consumed immediately. Store syrup in an airtight jar for up to 2 weeks. Keep cold-brew coffee refrigerated for up to 5 days.
