Ingredients

  • 2 tablespoons honey or maple syrup
  • 2 teaspoons lemon zest (finely grated)
  • 1 tablespoon fresh lemon juice
  • 1 large egg white (room temperature)
  • 1/4 teaspoon fine sea salt
  • 3/4 cup fresh blueberries (pat dry)
  • 1 tablespoon chia seeds (optional)
  • 2 tablespoons almond flour (optional)
  • Finely grated extra lemon zest for finishing
  • Powdered sugar or toasted almond flakes for dusting

Instructions

  1. Pulse cottage cheese in a food processor until mostly smooth.
  2. In a bowl, whisk together rolled oats, protein powder, salt, chia seeds, and almond flour.
  3. In a separate bowl, whisk honey, lemon zest, lemon juice, and egg white until glossy.
  4. Fold in smoothed cottage cheese to the wet mixture, followed by the dry ingredients until cohesive.
  5. Gently fold in fresh blueberries.
  6. Scoop mixture onto a parchment-lined tray and roll into rounds; chill for at least 30 minutes.
  7. Optional: briefly sear chilled bites in a nonstick skillet with coconut oil, 30-45 seconds per side.
  8. Garnish with extra lemon zest and a dusting of powdered sugar or toasted almond flakes.

Notes

Chill the bites thoroughly before serving to improve texture. Can store in the fridge for up to 4 days or freeze for 3 months.
