- 1/2 cup vanilla protein powder (whey or plant-based)
- 2 tablespoons honey or maple syrup

- 1 tablespoon fresh lemon juice
- 1 large egg white (room temperature)
- 1/4 teaspoon fine sea salt
- 3/4 cup fresh blueberries (pat dry)
- 1 tablespoon chia seeds (optional)
- 2 tablespoons almond flour (optional)
- Finely grated extra lemon zest for finishing
- Powdered sugar or toasted almond flakes for dusting
Instructions
- Pulse cottage cheese in a food processor until mostly smooth.
- In a bowl, whisk together rolled oats, protein powder, salt, chia seeds, and almond flour.
- In a separate bowl, whisk honey, lemon zest, lemon juice, and egg white until glossy.
- Fold in smoothed cottage cheese to the wet mixture, followed by the dry ingredients until cohesive.
- Gently fold in fresh blueberries.
- Scoop mixture onto a parchment-lined tray and roll into rounds; chill for at least 30 minutes.
- Optional: briefly sear chilled bites in a nonstick skillet with coconut oil, 30-45 seconds per side.
- Garnish with extra lemon zest and a dusting of powdered sugar or toasted almond flakes.
Notes
Chill the bites thoroughly before serving to improve texture. Can store in the fridge for up to 4 days or freeze for 3 months.
