Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, allowing some overhang for easy removal.
  2. Cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, then mix in the lemon zest and juice.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes, or until lightly golden and a toothpick inserted in the center comes out clean.
