Description

Ingredients

Instructions

  1. Prepare and measure: Chill time is needed later, so have a plate lined with parchment paper ready. Measure all ingredients before you start.
  2. Mix wet ingredients: In a medium bowl, stir together the nut butter, honey, lemon juice, lemon zest, and vanilla until smooth.
  3. Add oats: Fold the rolled oats into the wet mix. Stir until every oat is coated.
  4. Add coconut (optional): Stir in the shredded coconut for extra texture.
  5. Shape the cookies: Use a tablespoon or small scoop to portion the mixture onto the parchment and press gently to shape into rounds.
  6. Chill to set: Place the tray in the fridge and chill for at least 30 minutes.
  7. Check texture: After chilling, the cookies should feel set. If too soft, chill another 10–20 minutes.
