- 1/4 cup fresh lemon juice

Instructions
- Prepare and measure: Chill time is needed later, so have a plate lined with parchment paper ready. Measure all ingredients before you start.
- Mix wet ingredients: In a medium bowl, stir together the nut butter, honey, lemon juice, lemon zest, and vanilla until smooth.
- Add oats: Fold the rolled oats into the wet mix. Stir until every oat is coated.
- Add coconut (optional): Stir in the shredded coconut for extra texture.
- Shape the cookies: Use a tablespoon or small scoop to portion the mixture onto the parchment and press gently to shape into rounds.
- Chill to set: Place the tray in the fridge and chill for at least 30 minutes.
- Check texture: After chilling, the cookies should feel set. If too soft, chill another 10–20 minutes.
- Serve or store: Enjoy immediately or transfer to a sealed container for later.
Notes
Use room-temperature nut butter for easier mixing. Fresh lemon juice provides the best flavor.
