A cozy and lighter twist on the traditional pierogi casserole, featuring creamy filling and a golden, cheesy top.

- 16 frozen potato-and-cheese pierogi (about 1 lb)
- 1 cup frozen mixed peas and carrots, thawed
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup low-fat cottage cheese
- 1/2 cup plain low-fat Greek yogurt
- 1/3 cup light sour cream (or extra yogurt)
- 1/4 cup skim or low-fat milk
- 1 teaspoon Dijon mustard (optional)
- 1/2 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil or light butter
- 1 medium yellow onion, thinly sliced
- 2 garlic cloves, minced
- 1/2 teaspoon smoked paprika (or regular paprika)
- 2 tablespoons chopped fresh chives or green onions
- Cooking spray or a little extra olive oil for the dish
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Bring a large pot of salted water to a boil, add frozen pierogi, and cook for 3–4 minutes until they float and feel slightly tender. Drain well.
- In a skillet over medium heat, heat olive oil. Add onion and cook for 6–8 minutes until soft. Add garlic and paprika in the last minute.
- In a medium bowl, mix cottage cheese, Greek yogurt, sour cream, milk, Dijon, salt, and pepper until smooth. Fold in the thawed peas and carrots.
- Layer half of the drained pierogi in the prepared dish, spoon half of the creamy filling over them, and spread the cooked onions on top. Add the remaining pierogi and the rest of the creamy mix, then sprinkle cheddar cheese on top.
- Bake uncovered for 20–25 minutes until the cheese melts and the top is bubbly. Broil for 1–2 minutes for a crispier top.
- Let the casserole rest for 5 minutes before serving. Sprinkle with chopped chives before serving.
Notes
If using fresh pierogi, reduce boiling time. For lower sodium, use unsalted butter or olive oil.
