Description

A quick, cheesy snack made from leftover mashed potatoes and melty cheese, perfect for parties or as a cozy side dish.


Ingredients

  • 2 cups mashed potatoes (cooled or leftover)
  • 2 large eggs (lightly beaten)
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Oil spray or a little oil for greasing the tray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix mashed potatoes, shredded cheese, breadcrumbs, Parmesan, eggs, garlic powder, onion powder, salt, and pepper until even.
  3. Shape the mix into small balls or puffs and set them on the prepared sheet.
  4. Lightly spray or brush the tops with oil so they brown well.
  5. Bake for 20–25 minutes, until the puffs turn golden and get a crisp outside.
  6. Serve hot as a snack or side dish.

Notes

For a richer taste, use mashed potatoes made with butter and milk. Chill formed puffs 10–15 minutes before baking for firmer puffs.
