- 2 cups mashed potatoes (cooled or leftover)
- 2 large eggs (lightly beaten)
- 1 cup shredded cheese (cheddar or your favorite)
- 1/4 cup grated Parmesan cheese
- 1/2 cup plain breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
- Oil spray or a little oil for greasing the tray
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix mashed potatoes, shredded cheese, breadcrumbs, Parmesan, eggs, garlic powder, onion powder, salt, and pepper until even.
- Shape the mix into small balls or puffs and set them on the prepared sheet.
- Lightly spray or brush the tops with oil so they brown well.
- Bake for 20–25 minutes, until the puffs turn golden and get a crisp outside.
- Serve hot as a snack or side dish.
Notes
For a richer taste, use mashed potatoes made with butter and milk. Chill formed puffs 10–15 minutes before baking for firmer puffs.
