Description

A quick and easy Mediterranean Ground Beef Stir-Fry that’s full of flavor and perfect for busy weeknights.


Ingredients

Scale
  • 1 lb (450 g) ground beef (85% lean)
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (or sweet paprika)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 can (14 oz / 400 g) diced tomatoes, drained slightly
  • 1/2 cup pitted Kalamata olives, halved
  • 1 tbsp tomato paste
  • Juice of 1/2 lemon (about 12 tbsp)
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prep first by slicing the onion, mincing garlic, dicing the pepper, draining the tomatoes, and crumbling the feta.
  2. Heat a large skillet over medium-high heat and add 1 tbsp olive oil. When it shimmers, add the ground beef and break it up. Brown until no pink remains, about 6–8 minutes. Drain excess fat if needed.
  3. Push the beef to one side, add the remaining oil, then add the onion and bell pepper. Sauté for 4–5 minutes until soft and slightly golden.
  4. Add the garlic and cook 30 seconds until fragrant.
  5. Stir the beef back in, then add oregano, cumin, smoked paprika, tomato paste, and the drained diced tomatoes. Mix well and simmer for 5–7 minutes.
  6. Add halved olives and lemon juice. Stir and cook for 1–2 minutes more.
  7. Remove from heat and sprinkle crumbled feta and chopped parsley on top before serving.

Notes

Serve with rice, in warm pita, or alongside a green salad. Add plain yogurt or tzatziki for a creamy finish.
