- 1.5 lbs small Yukon gold potatoes, halved
- 3 tbsp olive oil, plus extra for drizzling

- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 cup Greek yogurt, room temperature
- 1 medium cucumber, grated and drained
- 2 tbsp fresh dill, finely chopped
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh dill sprigs for garnish
- Sliced radishes for color and crunch (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved Yukon gold potatoes with olive oil, sea salt, black pepper, and smoked paprika.
- Spread the seasoned potatoes in an even layer on a baking sheet.
- Roast for 25-30 minutes, turning once halfway through, until golden brown and crispy.
- In a medium bowl, combine the Greek yogurt, grated cucumber, dill, minced garlic, and lemon juice. Season with salt and pepper to taste.
- Once potatoes are ready, transfer to a serving bowl and top with tzatziki. Garnish with fresh dill and optional radish slices.
