Ingredients

  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Chopped cilantro (optional)
  • Lime wedges (for serving)

Instructions

  1. Rinse the rice under cold water until it runs clear.
  2. If your rice cooker has a sauté function, heat the olive oil and sauté diced onion and minced garlic for 3-4 minutes until soft.
  3. Add the rinsed rice to the cooker along with the broth, diced tomatoes, cumin, chili powder, and salt. Stir everything gently.
  4. Close the lid and set the rice cooker to the white rice setting, allowing it to cook.
  5. Once cooked, let the rice sit for 5 minutes, then fluff with a fork and serve with cilantro and lime wedges.
