Ingredients

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk, room temperature (or milk + 1/2 tsp vinegar)
- 1/4 cup vegetable oil
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a mini muffin tin or line with mini paper cups.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the buttermilk, vegetable oil, egg, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the mini chocolate chips.
- Spoon batter into the mini cups, filling each about two-thirds full.
- Bake for 10–12 minutes, until a toothpick comes out clean.
- Let cool in the pan for 2–3 minutes before transferring to a wire rack.
Notes
Measure flour by spooning into the cup and leveling. Use mini chips for even chocolate in every muffin.
