- 1 cup pecans, chopped
- 1 cup corn syrup
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 package of mini pie crusts or phyllo dough
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the chopped pecans, corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt. Mix well.
- Place the mini pie crusts in a muffin tin.
- Fill each crust with the pecan mixture until nearly full.
- Bake in the preheated oven for about 20-25 minutes, or until the filling is set and the tops are golden.
- Let cool before serving.
Notes
Serve at room temperature or slightly warm; can top with ice cream or whipped cream.
