Description

A luxurious spread made with fermented miso and soft butter, perfect for enhancing roasted vegetables, grilled fish, and more.


Ingredients

  • 1/2 cup (113 g) unsalted butter, room temperature
  • 1 tablespoon white (shiro) miso paste
  • 1 teaspoon lemon juice, fresh
  • 1/2 teaspoon soy sauce or tamari (optional)
  • 1 small clove garlic, grated or very finely minced
  • 1 teaspoon honey or mirin
  • 1 tablespoon finely chopped chives or scallions
  • Pinch of flaky sea salt
  • Pinch of freshly cracked black pepper

Instructions

  1. Place the softened butter in a chilled bowl and smooth it to a creamy consistency.
  2. Add the miso paste to the butter and fold together until fully incorporated.
  3. Stir in the grated garlic, lemon juice, soy sauce (if using), and honey or mirin.
  4. Fold in the chopped chives and season with flaky sea salt and black pepper.
  5. Shape the butter onto parchment and roll into a log, or press into a ramekin and chill until firm.

Notes

For best flavor, allow the butter to marry in the refrigerator for at least 30 minutes before serving.
