Instructions

  1. In a large mixing bowl, whisk together the flour, salt, sugar, and instant yeast until well incorporated.
  2. Gradually add the warm water to the dry mixture, stirring gently with a wooden spoon until a shaggy dough forms.
  3. Fold in the aged cheddar and mozzarella, along with the fresh herbs, until evenly distributed.
  4. Cover the bowl with plastic wrap or a damp kitchen towel and allow the dough to rise in a warm place for 1 to 2 hours, or until it doubles in size.
  5. Preheat your oven to 450°F (232°C), placing a Dutch oven (with its lid) inside to heat about 30 minutes before baking.
  6. Lightly flour a work surface and turn out the risen dough, shaping it into a round loaf.
  7. Carefully remove the hot Dutch oven from the oven, place the shaped bread inside, brush the top with olive oil, and sprinkle with sea salt.
  8. Cover with the lid and bake for 30 minutes. Remove the lid and bake for an additional 10 to 15 minutes, or until the crust is golden brown and the bread sounds hollow when tapped.
