- 1 large apple, diced
- 2 large eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, whisk the eggs, milk, maple syrup, and vanilla extract until combined.
- Stir in the oats, baking powder, cinnamon, and salt until well mixed.
- Fold in the diced apple and optional chopped nuts.
- Pour the mixture into the baking dish and spread evenly.
- Bake for 30-35 minutes until the top is golden brown and the center is set.
- Allow to cool for 5 minutes before serving.
