Description

Indulge in these soft and fluffy Old-Fashioned Buttermilk Donut Bars topped with a delicious brown butter maple vanilla bean glaze. Perfect for any occasion!


Ingredients

  • 3 1/2 cups (440g) cake flour
  • 2 1/2 teaspoons (10g) baking powder
  • 1 teaspoon (6g) salt
  • 3/4 teaspoon (1g) nutmeg
  • 1/4 teaspoon (2g) baking soda
  • 1/2 cup (120g) brown sugar
  • 1/2 cup (110g) granulated sugar
  • 1/4 cup (58g) salted butter, melted
  • 2 eggs + 1 egg yolk, at room temperature
  • 1 tablespoon vanilla extract
  • 3/4 cup (180ml) buttermilk
  • 1 1/2 cups (190g) powdered sugar
  • 6 tablespoons (85g) salted butter, melted and browned
  • 1/3 cup (113g) maple syrup
  • 2 tablespoons (30ml) milk of choice
  • 1 teaspoon (4g) vanilla extract or paste
  • Pinch of salt
  • 46 cups high heat olive oil or avocado oil for frying

Instructions

  1. In a large mixing bowl, whisk together the cake flour, baking powder, salt, nutmeg, and baking soda. Set aside.
  2. In another large bowl, whisk both sugars and melted butter together. Add the eggs, egg yolk, and vanilla, whisking until smooth. Gradually whisk in the buttermilk.
  3. Slowly add the dry mixture to the wet ingredients and fold gently until just combined. Cover the bowl and chill it in the refrigerator for at least 30 to 60 minutes.
  4. Once chilled, flour your work surface and hands. Transfer the dough and roll it into a rectangle (about 18×3.5 inches and 1/2 inch thick).
  5. Flour a bench scraper or knife and slice the dough lengthwise in half, then make 8-9 cuts widthwise to create 16-18 small bars.
  6. Heat oil in a pot over medium-high heat until it reaches 350°F-370°F. Carefully lower the bars into the hot oil, frying for 1-2 minutes until golden. Flip and fry for another 1-2 minutes.
  7. In a large bowl, whisk together the powdered sugar, browned butter, maple syrup, milk, vanilla, and a pinch of salt until smooth. Adjust consistency as needed.
  8. Dip each cooled bar, top side down, into the glaze. Set them on a cooling rack until the glaze sets.
  9. Serve and enjoy!

Notes

These bars are best served fresh, but can be stored in an airtight container at room temperature for a couple of days. Reheat leftovers in the oven.
