Description
A comforting and elegant dish combining the flavors of a cheeseburger in a creamy soup form.
Ingredients
Scale
- 1 tablespoon room temperature butter
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 pound ground beef (lean)
- 4 cups beef broth
- 1 cup elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 cup milk (whole or 2%)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon Dijon mustard
- Fresh parsley, finely chopped (for garnish)
- Optional: Additional cheese for sprinkling
Instructions
- In a large pot, melt the butter over medium heat. Sauté the onions until translucent, approximately 2-3 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Incorporate ground beef into the pot and cook until browned, about 5-7 minutes.
- Deglaze the pot with a splash of broth, scrapping up any bits stuck to the bottom.
- Pour in the remaining broth and add macaroni. Bring to a gentle simmer and cook until pasta is tender, about 8-10 minutes.
- Stir in the milk, Worcestershire sauce, and Dijon mustard, warming through.
- Gradually mix in the cheddar cheese until melted and creamy.
- Taste and adjust seasoning as needed.
