- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 2 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon peppermint extract
- Red gel food coloring
- Crushed peppermint candies or candy canes for topping
Instructions
- In a large mixing bowl, cream together the room temperature butter and granulated sugar until light and fluffy, approximately 3–5 minutes.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
- Split the dough into two equal sections and mix in peppermint extract and red gel food coloring into one half.
- Roll each portion into logs, press together and twist to create a swirl. Wrap logs in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C). Slice the dough into ¼-inch thick rounds and place on a parchment-lined baking sheet.
- Bake for 10–12 minutes or until edges are lightly golden. Remove from oven and sprinkle with crushed peppermint candies while warm.
