Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • Crushed peppermint candies or candy canes for topping

Instructions

  1. In a large mixing bowl, cream together the room temperature butter and granulated sugar until light and fluffy, approximately 3–5 minutes.
  2. Beat in the egg and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  4. Split the dough into two equal sections and mix in peppermint extract and red gel food coloring into one half.
  5. Roll each portion into logs, press together and twist to create a swirl. Wrap logs in plastic wrap and refrigerate for at least 2 hours.
  6. Preheat oven to 350°F (175°C). Slice the dough into ¼-inch thick rounds and place on a parchment-lined baking sheet.
  7. Bake for 10–12 minutes or until edges are lightly golden. Remove from oven and sprinkle with crushed peppermint candies while warm.
