A quick and delicious Pesto Chicken Flatbread that combines juicy chicken, flavorful basil pesto, and gooey cheese on a crispy flatbread base.

- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 pieces of flatbread (store-bought or homemade)
- 1 cup fresh basil pesto (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry and sprinkle with salt and pepper.
- Heat olive oil in a skillet and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
- Place flatbreads on a baking sheet and spread basil pesto on each.
- Evenly distribute sliced chicken, sprinkle mozzarella cheese, add halved cherry tomatoes, and top with grated Parmesan.
- Bake in the oven for 10-12 minutes until cheese is melted and edges are golden brown. Optionally broil for 1-2 minutes for a crispy top.
- Let cool for a minute, slice into quarters or halves, and garnish with fresh basil leaves if desired.
Notes
Substitutions: Use grilled or rotisserie chicken if short on time; try different cheeses like goat cheese or feta. To make vegan, replace chicken with roasted vegetables or chickpeas.
