- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 2 tablespoons olive oil (extra virgin recommended)
- 1 cup homemade or store-bought pesto (preferably fresh)
- 2 red bell peppers, sliced thinly
- 1 yellow bell pepper, sliced thinly
- Salt and pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat until shimmering.
- Add the chicken to the skillet, cooking for about 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and let rest.
- In the same skillet, add the sliced bell peppers. Sauté for about 5-6 minutes until tender and slightly caramelized.
- Lower the heat and return the chicken to the skillet. Generously dollop the pesto over the chicken, cooking for an additional 2-3 minutes.
- Serve the pesto chicken topped with the sautéed peppers and fresh basil leaves.
Notes
For best results, opt for high-quality, fresh pesto. You can also marinate the chicken in pesto for a deeper flavor.
