  • 1 tsp vanilla extract
  • ½ cup dark chocolate (for drizzling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, chopped pistachios, granulated sugar, egg whites, and vanilla extract. Mix until evenly coated.
  3. Using a small ice cream scoop or your hands, form small mounds of the mixture, placing them about an inch apart on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the edges are golden brown and the tops are slightly toasted.
  5. Remove from the oven and allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
  6. Once cooled, melt the dark chocolate and drizzle over the macaroons.
