- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup pistachios, chopped
- 1 cup dark chocolate for dipping
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy.
- Stir in the vanilla extract.
- Gradually incorporate the flour and salt until just combined.
- Fold in the chopped pistachios.
- Roll the dough into small balls and place them on a baking sheet, then flatten slightly.
- Bake for about 12-15 minutes, until the edges are lightly golden.
- Cool completely on a wire rack.
- Melt the dark chocolate until smooth.
- Dip half of each cooled cookie into the melted chocolate and place on parchment paper to set.

Notes
Make sure your butter is at room temperature for easy blending. Add a teaspoon of milk if the dough feels too crumbly.
