Description

A delicious breakfast combining the flavors of pizza and eggs, perfect for any time of day.


Ingredients

Scale
  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 3 large eggs
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top

Instructions

  1. Heat a non-stick frying pan over medium heat. Sprinkle half of your grated cheese evenly in the pan and let it melt until it’s slightly crisp.
  2. Crack the eggs into a bowl and whisk them until smooth and uniform.
  3. Pour the whisked eggs gently over the melted cheese in the pan. Cover with a lid and allow it to cook until the bottom is firm and golden brown.
  4. Carefully use a spatula to flip the egg-cheese base over.
  5. Spread the passata on top of the cooked side. Add your salami slices and sprinkle the remaining cheese over it. Cover again until the cheese melts and the toppings are warmed through.
  6. Remove the Pizza Eggs from the pan, sprinkle with mixed herbs, and enjoy hot!

Notes

Customize the toppings with your favorite pizza ingredients like peppers or olives. Serve hot and consider pairing with a side salad.
