- 1 scoop (about 30 g) vanilla whey or plant protein powder, sifted
- 2 tbsp whole milk or almond milk
- 1 tsp pure vanilla extract
- 1–2 tsp honey or maple syrup, to taste
- 2 oz (55 g) dark chocolate (70%), finely chopped
- 2 tbsp heavy cream or coconut cream, warmed
- Pinch of flaky sea salt
- 2 tbsp toasted almonds or hazelnuts, coarsely chopped
- 3–4 fresh raspberries or shaved dark chocolate curls
- Fresh mint leaves, finely chopped (optional)
Instructions
- Prepare the base: In a chilled bowl, whisk the room-temperature Greek yogurt until glossy and smooth. Add sifted vanilla protein powder, 1 tablespoon milk, vanilla extract, and honey. Whisk briskly until homogenous and velvety.
- Adjust consistency: If too thick, stir in up to 1 additional tablespoon milk until the pudding slides slowly from the spoon.
- Make the chocolate sauce: Place chopped dark chocolate in a heatproof bowl. Warm the cream until it steams and pour it over chocolate. Let sit for 30 seconds, then stir until glossy and smooth.
- Assemble: Spoon the pudding into small glass jars or shallow bowls. Swirl 1–2 teaspoons of the warm chocolate sauce over each portion.
- Chill briefly or serve immediately: For a firmer set, chill for 20–30 minutes.
Notes
Use room-temperature yogurt for smoother blending. For nut-free, replace nuts with seeds.
