Description
Warm, gooey Pumpkin Brownies combine rich chocolate with spiced pumpkin for a comforting treat that’s perfect for chilly days.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, beat the softened butter and granulated sugar until creamy. Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add this dry mix to the wet ingredients, stirring until just combined.
- In a separate bowl, combine pumpkin puree, pumpkin pie spice, cinnamon, and brown sugar.
- Pour half of the brownie batter into the prepared pan and spread it evenly. Dollop the pumpkin filling on top and swirl gently. Pour the remaining brownie batter on top and smooth it out.
- Bake for 25-30 minutes. Check doneness by inserting a toothpick; if it has a few moist crumbs, they’re ready.
- Let the brownies cool in the pan before cutting into squares.
Notes
Serve with whipped cream or a sprinkle of nuts for added richness. For variations, make them gluten-free or dairy-free.
