- 12 large pasta shells (cooked until al dente)
- 1 cup pumpkin puree (unsweetened)
- 1 cup gouda cheese, shredded (freshly grated)
- ½ cup ricotta cheese (room temperature)
- 1 tsp garlic powder
- ½ tsp nutmeg (freshly grated)
- Salt and pepper to taste
- 1 cup marinara sauce (preferably homemade or high-quality store-bought)
- ½ cup freshly grated parmesan cheese
- Fresh parsley (finely chopped, for garnish)
Instructions
- In a mixing bowl, combine pumpkin puree, gouda, ricotta, garlic powder, nutmeg, salt, and pepper. Mix until creamy.
- Fill each cooked pasta shell with the pumpkin and gouda mixture using a teaspoon or piping bag.
- Preheat oven to 375°F (190°C).
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place the stuffed shells upright in the sauced baking dish and cover with remaining marinara sauce.
- Sprinkle parmesan cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let rest for a few minutes before garnishing with freshly chopped parsley.
Notes
Adjust spices to taste and consider adding a hint of sage or thyme. Experiment with different cheeses for varied flavors.
