Description

Ingredients

  • 12 large pasta shells (cooked until al dente)
  • 1 cup pumpkin puree (unsweetened)
  • 1 cup gouda cheese, shredded (freshly grated)
  • ½ cup ricotta cheese (room temperature)
  • 1 tsp garlic powder
  • ½ tsp nutmeg (freshly grated)
  • Salt and pepper to taste
  • 1 cup marinara sauce (preferably homemade or high-quality store-bought)
  • ½ cup freshly grated parmesan cheese
  • Fresh parsley (finely chopped, for garnish)

Instructions

  1. In a mixing bowl, combine pumpkin puree, gouda, ricotta, garlic powder, nutmeg, salt, and pepper. Mix until creamy.
  2. Fill each cooked pasta shell with the pumpkin and gouda mixture using a teaspoon or piping bag.
  3. Preheat oven to 375°F (190°C).
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place the stuffed shells upright in the sauced baking dish and cover with remaining marinara sauce.
  6. Sprinkle parmesan cheese on top.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  8. Let rest for a few minutes before garnishing with freshly chopped parsley.
