Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy, about 4 minutes.
- Mix in pumpkin puree, egg, and vanilla extract until smooth and creamy.
- Gradually add the flour mixture to the pumpkin mixture, mixing until just combined.
- Scoop the cookie batter onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes or until golden brown on the edges.
- While the cookies cool, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cookies and allow it to set before serving.
