Description

Delightful pumpkin pie crumble bars that combine creamy pumpkin filling with a crispy topping, perfect for fall gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, softened
  • 1 cup pumpkin puree (canned or homemade)
  • 1/2 cup sweetened condensed milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour (for topping)
  • 1/2 cup rolled oats (for topping)
  • 1/3 cup brown sugar (for topping)
  • 1/2 teaspoon cinnamon (for topping)
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, oats, brown sugar, cinnamon, and salt. Add softened butter and mix until crumbs form. Press this mixture into the bottom of a greased 8×8 inch baking dish.
  3. In another bowl, whisk together pumpkin puree, sweetened condensed milk, egg, vanilla, pumpkin pie spice, and salt until smooth.
  4. Pour the filling over the base, spreading it out evenly.
  5. In a bowl, mix flour, oats, brown sugar, and cinnamon for the topping. Drizzle in melted butter and stir until crumbly. Scatter this mixture over the pumpkin filling.
  6. Bake for 30-35 minutes, or until filling is set and topping is golden brown.
  7. Allow to cool for at least 10 minutes before cutting into squares.

Notes

For an extra touch, garnish with whipped cream or a sprinkle of powdered sugar. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
