- 1/2 cup rolled oats
- 1/3 cup brown sugar

- 1/3 cup unsalted butter, softened
- 1 cup pumpkin puree (canned or homemade)
- 1/2 cup sweetened condensed milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour (for topping)
- 1/2 cup rolled oats (for topping)
- 1/3 cup brown sugar (for topping)
- 1/2 teaspoon cinnamon (for topping)
- 1/4 cup unsalted butter, melted (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, oats, brown sugar, cinnamon, and salt. Add softened butter and mix until crumbs form. Press this mixture into the bottom of a greased 8×8 inch baking dish.
- In another bowl, whisk together pumpkin puree, sweetened condensed milk, egg, vanilla, pumpkin pie spice, and salt until smooth.
- Pour the filling over the base, spreading it out evenly.
- In a bowl, mix flour, oats, brown sugar, and cinnamon for the topping. Drizzle in melted butter and stir until crumbly. Scatter this mixture over the pumpkin filling.
- Bake for 30-35 minutes, or until filling is set and topping is golden brown.
- Allow to cool for at least 10 minutes before cutting into squares.
Notes
For an extra touch, garnish with whipped cream or a sprinkle of powdered sugar. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
