- 1 cup pumpkin seeds (raw and unsalted)
- 1/2 cup honey or maple syrup (room temperature)
- 1/4 cup coconut oil (melted)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- Optional: 1/2 cup dried cranberries or raisins
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, pumpkin seeds, cinnamon, and salt. Stir to ensure even distribution.
- In another bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
- Pour the wet mixture over the dry ingredients and stir gently to coat.
- Form clusters with the mixture using your hands and arrange them on the prepared baking sheet.
- Bake for 15-20 minutes or until lightly golden brown and fragrant.
- Remove from the oven and allow to cool completely on the baking sheet to form clusters.
Notes
For added richness, consider tossing in nuts like pecans or walnuts. Store in an airtight container for up to two weeks.
