- 1 cup strong brewed coffee or espresso, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 package ladyfinger cookies (about 24 cookies)
- 1 cup pumpkin puree (canned or homemade)
- 1 cup mascarpone cheese, softened
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
- Extra pumpkin pie spice (for garnish)
Instructions
- In a bowl, mix the cooled coffee and coffee liqueur (if using) to create a coffee mixture.
- In a large bowl, whisk together pumpkin puree, mascarpone cheese, heavy cream, powdered sugar, pumpkin pie spice, and vanilla extract until smooth and fluffy.
- Quickly dip each ladyfinger into the coffee mixture and place them in a single layer at the bottom of a serving dish or individual cups.
- Spread a generous layer of the pumpkin filling over the ladyfingers. Repeat the layering process until ingredients are used up, finishing with the pumpkin filling.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust the top with cocoa powder and extra pumpkin pie spice.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze and thaw in the fridge before serving.
