Description

A delightful spin on the classic Italian dessert, Pumpkin Tiramisu combines smooth pumpkin flavors with warm spices, creating a cozy treat perfect for fall celebrations.


Ingredients

  • 1 cup strong brewed coffee or espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 package ladyfinger cookies (about 24 cookies)
  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup mascarpone cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting
  • Extra pumpkin pie spice (for garnish)

Instructions

  1. In a bowl, mix the cooled coffee and coffee liqueur (if using) to create a coffee mixture.
  2. In a large bowl, whisk together pumpkin puree, mascarpone cheese, heavy cream, powdered sugar, pumpkin pie spice, and vanilla extract until smooth and fluffy.
  3. Quickly dip each ladyfinger into the coffee mixture and place them in a single layer at the bottom of a serving dish or individual cups.
  4. Spread a generous layer of the pumpkin filling over the ladyfingers. Repeat the layering process until ingredients are used up, finishing with the pumpkin filling.
  5. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  6. Before serving, dust the top with cocoa powder and extra pumpkin pie spice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze and thaw in the fridge before serving.
