Description

A satisfying and easy breakfast casserole bursting with juicy blueberries and soft French bread, perfect for feeding a crowd.


Ingredients

  • 1 loaf of French bread, cubed
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk (whole or 2% works best)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish with butter or cooking spray.
  2. In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until fully combined.
  3. Add the cubed French bread and fresh blueberries to the egg mixture and gently fold together until the bread is well coated.
  4. Pour the mixture into the greased baking dish and spread it out evenly.
  5. Bake for about 45-50 minutes until set and the top is golden brown.
  6. Allow to cool for a few minutes before serving warm, optionally topped with syrup or powdered sugar.

Notes

Use day-old bread for the best texture. This casserole can be assembled the night before and baked in the morning.
