Description

A wholesome and creamy dessert that’s quick and easy to make, perfect for breakfast or as a sweet snack.


Ingredients

  • 1 cup quinoa, rinsed well
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional toppings: Raisins, Nuts (like almonds or walnuts), Fresh fruit (such as berries or sliced bananas)

Instructions

  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a medium saucepan, mix the rinsed quinoa, milk, sugar, vanilla extract, cinnamon, and salt.
  3. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is tender and mixture thickens.
  4. Stir occasionally to prevent sticking at the bottom.
  5. Once cooked, remove from heat and let sit covered for a few minutes.
  6. Serve warm or chilled with desired toppings.

Notes

Store leftover quinoa pudding in an airtight container in the refrigerator for 3-4 days. Reheat gently with a splash of milk to regain creaminess.
