- 1 cup quinoa, rinsed well
- 2 cups milk (dairy or non-dairy)
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
- Optional toppings: Raisins, Nuts (like almonds or walnuts), Fresh fruit (such as berries or sliced bananas)
Instructions
- Rinse the quinoa under cold water to remove bitterness.
- In a medium saucepan, mix the rinsed quinoa, milk, sugar, vanilla extract, cinnamon, and salt.
- Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is tender and mixture thickens.
- Stir occasionally to prevent sticking at the bottom.
- Once cooked, remove from heat and let sit covered for a few minutes.
- Serve warm or chilled with desired toppings.
Notes
Store leftover quinoa pudding in an airtight container in the refrigerator for 3-4 days. Reheat gently with a splash of milk to regain creaminess.
