Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, blend together the red velvet cake mix, eggs, vegetable oil, and vanilla extract until fully combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop out tablespoon-sized portions of dough and roll each into a ball.
- Roll each cookie ball in powdered sugar until fully coated.
- Line a baking sheet with parchment paper and place cookies about 2 inches apart.
- Bake for 10-12 minutes until the edges are firm, but the centers remain soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
