Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and garlic, cooking until translucent and fragrant, about 3-4 minutes.
- Incorporate the bell pepper, zucchini, and eggplant. Sauté for 5-7 minutes until the vegetables begin to soften.
- Stir in the chopped tomatoes, thyme, basil, salt, and pepper. Allow the mixture to simmer for 10 minutes.
- Gradually add the vegetable broth. Bring to a gentle boil, then reduce the heat and let it simmer uncovered for 20 minutes.
- Use an immersion blender to achieve a silky consistency, or leave it chunky for more rustic charm. Adjust seasoning as necessary.
- Just before serving, stir in fresh basil for an aromatic touch.
