Description

Ingredients

  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 bell pepper (red, yellow, or orange), diced
  • 2 medium zucchinis, diced
  • 1 medium eggplant, diced
  • 4 ripe tomatoes, peeled and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste
  • 4 cups vegetable broth
  • Fresh basil, finely chopped, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and garlic, cooking until translucent and fragrant, about 3-4 minutes.
  2. Incorporate the bell pepper, zucchini, and eggplant. Sauté for 5-7 minutes until the vegetables begin to soften.
  3. Stir in the chopped tomatoes, thyme, basil, salt, and pepper. Allow the mixture to simmer for 10 minutes.
  4. Gradually add the vegetable broth. Bring to a gentle boil, then reduce the heat and let it simmer uncovered for 20 minutes.
  5. Use an immersion blender to achieve a silky consistency, or leave it chunky for more rustic charm. Adjust seasoning as necessary.
  6. Just before serving, stir in fresh basil for an aromatic touch.

Using fresh, in-season produce enhances both flavor and nutrition. A squeeze of lemon juice can brighten the flavors before serving.
