Instructions
- Preheat your oven to 400°F (200°C).
- Toss the butternut squash cubes with olive oil, salt, and pepper in a large bowl.
- Spread the squash on a baking sheet in a single layer and roast for about 25-30 minutes, tossing halfway through.
- Once fork-tender, drizzle maple syrup over the squash and sprinkle chopped pecans on top. If desired, add cinnamon.
- Return to the oven for an additional 10-15 minutes until syrup bubbles and pecans toast.
