- 2 (15 oz) cans chickpeas (garbanzo beans), drained and rinsed
- 1–2 tablespoons olive oil
- 1/2 teaspoon fine sea salt (adjust to taste)
- 1/2 teaspoon smoked paprika (or other seasoning)
- 1/2 teaspoon garlic powder (or other seasoning)
- 1/4 teaspoon ground cumin (or other seasoning)
- 1/4 teaspoon black pepper (or other seasoning)
- Pinch of cayenne (optional)
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Pat the rinsed chickpeas dry with a clean towel and remove any loose skins.
- Toss the chickpeas in a bowl with olive oil, salt, and chosen spices until evenly coated.
- Spread the chickpeas in a single layer on the baking sheet.
- Roast for 20–30 minutes, shaking the pan or stirring every 8–10 minutes for even browning.
- Remove from the oven and let them sit for 5 minutes, then finish with lemon zest or juice if desired.
- Serve warm or at room temperature.
Notes
Pat the chickpeas dry for crispier results. Use low-sodium canned chickpeas to control salt levels.
