Description

Ingredients

  • 1 small pumpkin, peeled and diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons honey
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine diced pumpkin, olive oil, salt, and black pepper. Toss until the pumpkin is evenly coated.
  3. Spread the pumpkin on a baking sheet in a single layer and roast for about 25-30 minutes until tender and lightly caramelized.
  4. Remove from the oven and drizzle honey over the roasted pumpkin.
  5. Sprinkle crumbled feta cheese on top and return to the oven for an additional 5 minutes to warm the cheese.
  6. If using fresh herbs, sprinkle them on just before serving.

Notes
