- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 2 tablespoons honey
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine diced pumpkin, olive oil, salt, and black pepper. Toss until the pumpkin is evenly coated.
- Spread the pumpkin on a baking sheet in a single layer and roast for about 25-30 minutes until tender and lightly caramelized.
- Remove from the oven and drizzle honey over the roasted pumpkin.
- Sprinkle crumbled feta cheese on top and return to the oven for an additional 5 minutes to warm the cheese.
- If using fresh herbs, sprinkle them on just before serving.
Notes
Ensure pumpkin pieces are cut uniformly for even cooking. Optionally add nuts like walnuts for crunch.
