- 2 large sweet potatoes, washed and scrubbed
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ¾ cup crumbled feta cheese
- ¼ cup honey
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the washed sweet potatoes into ½-inch thick rounds.
- In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
- Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
- Roast for about 25-30 minutes, turning halfway through, until tender and golden brown.
- Remove from the oven and let cool slightly.
- Sprinkle crumbled feta cheese over the warm sweet potato rounds, drizzle with honey, and finish with chopped parsley.
- Serve warm or at room temperature.
Notes
You can add chili flakes for heat or nuts for extra crunch. Sweet potatoes can be prepared and stored in the fridge beforehand.
