Description

A delicious side dish that combines sweet, savory, and creamy flavors with roasted sweet potatoes, feta, and a drizzle of honey.


Ingredients

  • 2 large sweet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the washed sweet potatoes into ½-inch thick rounds.
  3. In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  5. Roast for about 25-30 minutes, turning halfway through, until tender and golden brown.
  6. Remove from the oven and let cool slightly.
  7. Sprinkle crumbled feta cheese over the warm sweet potato rounds, drizzle with honey, and finish with chopped parsley.
  8. Serve warm or at room temperature.

Notes

You can add chili flakes for heat or nuts for extra crunch. Sweet potatoes can be prepared and stored in the fridge beforehand.
